I thought you might find some quick recipes useful so that you can have more time to enjoy the summer weather! The first recipe I have never tried but it comes highly recommended from my sister in Canada.
Fry the onion until it starts to brown. Add the diced pork and fry for a few minutes to seal the surfaces. Add the curry paste and marmalade, then stir in the stock. Bring to the boil then simmer for about ten minutes. Serve on a bed of rice.
This isn't a real risotto but basically a nice way of serving vegetables, with or without meat.
Put the rice and stock in a saucepan and bring to the boil and then simmer uncovered for about 10 minutes. Add the prepared vegetables and leave to simmer for a further 10 minutes until the liquid has been absorbed and the rice is tender. If you are using any vegetables that need longer cooking time, then par-boil them first. While the rice is cooking heat the oil in a large pan or wok. Add the garlic and cook for 1-2 minutes. Add the tomatoes and cook for 3-4 minutes until heated through. Add the olives and the rice mixture and stir. Season to taste and serve piping hot.
This is a tasty dish that will pep up any meal as a starter or as an accompaniment to the main meal.
Place the pepper under a hot grill or over a flame and turn until the skin is all blackened. Cover with a damp tea-towel and leave until cool enough to handle, then remove the skin. Cut the pepper in half, remove the seeds and core, then finely dice the flesh and place in a small bowl. Finely chop the onion and tomato and add these to the pepper. Add the mustard seeds and sugar. Stir well, then leave in the 'fridge for an hour or two which will allow the flavours to develop. This dish must have ripe tomatoes only.
